Wedding Cake Recipes 10 Easy Steps


For a delicious, moist & easy to bake traditional rich fruit cake in 10 easy steps,

Mixed Dried Fruit 1.1 kg

Glace Cherries 100g

Irish Whiskey 60ml

Butter 280g

Brown Sugar 280g

Eggs 4

Plain Flour 375g

Mixed Spices 2 tsp

Almonds 60g

Step 1 - Mix together the mixed dried fruit & the glace cherries with the whiskey & leave over night to soak.

Step 2 - Preheat the oven to 140oc. Grease & line an 8" cake tin.

Step 3 - Beat the butter & sugar until light & fluffy.

Step 4 - Gradually add the eggs, beating well after each addition.

Step 5 - In a seperate bowl, add the sifted flour, mixed spices & almonds.

Step 6 - Combine the fruit mixture, butter mixture & the flour.

Step 7 - Spoon the mixture into your tin & tap on a work surface to remove any air bubbles.

Step 8 - Wrap the sides & top of the tin in brown paper to prevent burning.

Step 9 - Baking time 3 3/4 hours.

Step 10 - When cold, wrap in grease proof paper & store in an airtight container, Feeding it at two weekly intervals with whiskey will help to keep it mosit. This cake should be ready to eat in approx 6 weeks.
