Move Over Cupcakes....
Move over cupcakes there is a new treat in town. The French macaroon is becoming an increasingly popular alternative to the cupcake wedding cake. Why not give them a try yourself with this simple recipe,
You'll need,
8oz icing sugar
4oz ground almonds
4 egg whites
1oz caster sugar
To get started,line 3 baking trays with greaseproof paper. Mix the icing sugar & almonds until they are very fine. In a seperate bowl whisk the egg white until it begins to form peaks. Contiune whisking while adding a the caster sugar, the mixture should be shiny. At this point you can add your food colouring. Then add the almond mixture with the egg mixture & fill a piping bag with a large smooth nozzel. Pipe circles onto the lined trays and leave uncovered, at room temperature for about 4 hrs. Preheat the oven to 160 oC and bake for 10-12mins until crisp. Leave to cool on the paper on a wire tray. When they are cold, sandwich together with your choice of filling & enjoy.
